Lemon muffins: makes 12
Ingredients
5 oz / 141g Granulated sugar
5 oz / 141g Phase margarine
5 oz / 141g Plain flour
3 Eggs
1/2 oz / 14g Baking powder
3/4 Lemon
5 oz / 141g Icing sugar
Instructions
- Cream together the phase margarine and sugar until smooth, light, and fluffy.
- Whisk egg separately then add to mix slowly.
- Mix in flour and baking powder (mixture should be thick and creamy).
- Add the grated rind of the lemons, being careful to avoid adding the white pith.
- Scoop mixture into muffin cases
- Bake on Gas 4/350°F/180°C for around 20 minutes, cooking until golden brown and cake feels firm.
- Make up the icing using the lemon juice, water and icing sugar.
- Allow the muffins to cool, smooth over the icing and allow time to set.
