Food for Champions Recipes

The pupils in Citywide’s Food for Champions program have absolutely loved these recipes—why not try making them together at home?
Serves 4
Sweetcorn Fritters
Ingredients:
- ½ cup plain flour
- ½ tsp baking powder
- 1 egg
- ¼ cup whole milk
- ½ cup sweetcorn (fresh, canned, or frozen)
- 2 spring onions, finely chopped
- ½ fresh chilli, finely chopped (adjust to taste)
- A handful of fresh coriander, chopped
- Oil for frying
Instructions:
- In a mixing bowl, whisk together the flour, baking powder, egg, and milk until smooth.
- Stir in the sweetcorn, spring onions, chilli, and coriander. Add a small drizzle of oil and mix well.
- Heat a little oil in a frying pan over medium heat.
- Drop a dessert spoonful of the mixture into the pan and flatten slightly. Fry for 2–3 minutes on each side or until golden brown and cooked through.
- Drain on paper towels and serve warm.
Serves 4
Super Beet Burger
Ingredients:
- 400g tin chickpeas, drained
- 340g tin sweetcorn, drained
- 1 sweet potato, peeled and chopped
- ½ tsp ground coriander
- ½ tsp ground cumin
- 3 tbsp plain flour
- 1 lemon (zest and juice)
- ½ bunch fresh coriander
- 1 cooked beetroot
- 4 wholemeal burger buns
Instructions:

Cook the Sweet Potato
Peel, chop, and boil the sweet potato in a saucepan with water until soft and tender. Drain well. -
Blend the Mixture
In a food processor, combine the cooked sweet potato, chickpeas, sweetcorn, beetroot, ground coriander, ground cumin, and fresh coriander. Blend until well mixed but still slightly chunky. -
Add Lemon
Transfer the mixture to a bowl. Add the lemon zest and juice, and mix well. -
Shape the Burgers
Divide the mixture into 4 equal portions and shape into burger patties. Dust each side with flour. -
Cook the Burgers
Heat a little oil in a pan over medium heat. Cook each burger for about 5 minutes on each side, until golden brown and cooked through. -
Toast the Buns
Toast the wholemeal burger buns in the same pan until lightly crisp. -
Assemble and Serve
Place the burgers in the buns and garnish with your favorite sauces, pickles, or salad toppings.

Italian Potato Gnocchi with Roasted Red Pepper, Tomato, Basil & Garlic
Ingredients:
- 1 red pepper (roasted, peeled)
- 2 plum tomatoes (peeled, deseeded)
- 1 bulb garlic (chopped/crushed)
- 6 basil leaves (torn)
- 1 large waxy potato (peeled, chopped)
- 70g strong white 00 flour
- 35g Parmesan (grated)
- 1 egg yolk
- Salt, olive oil
Instructions:

Gnocchi Dough:
- Boil potato until soft, drain, mash.
- Mix with flour, egg yolk, and seasoning to form dough.
- Roll into sausage shape, cut into gnocchi pieces.

Sauce Prep:
- Roast red pepper, peel, chop.
- Blanch tomatoes, peel, deseed, chop.
- Mix with garlic and torn basil.

Cooking:
- Pan-fry gnocchi until golden.
- Add sauce ingredients, cook briefly.
- Finish with grated Parmesan.
